Southwest Zest Chicken and Rice Bowl
This Southwest-inspired Chicken and Rice Bowl is the perfect combination of easy and delicious. Simmered in a perfectly seasoned sauce with cumin and jalapeños, Bush's® Sidekicks™ Southwest Zest™ Pinto Beans will add effortless flavor as a topper for any classic rice bowl.
Ingredients
- 3 cups instant long grain white rice or brown rice
- 1-1/2 cups cooked chicken, shredded
- 1/2 cup Pico de Gallo salsa, mild
- 1 (15.25 oz.) can Southwest corn (Green Giant), drained
- 1 (15 oz.) can Bush’s Sidekicks Southwest Zest Pinto Beans
- 3 Tbsp. Monterey Jack cheese, shredded
Optional Toppings
- Avocado
- Sour cream
- Cilantro
Directions
- Prepare rice according to package directions.
- Mix cooked chicken with salsa.
- In a microwave-safe bowl, layer 1 cup rice, 1/2 cup of chicken and salsa mixture, 1/4 cup corn, 1/2 cup Bush’s Sidekicks Southwest Zest Pinto Beans and 1 tablespoon of cheese.
- Cover and microwave for 1 minute, until hot, add desired toppings and serve.
