Southwest Zest Chicken and Rice Bowl

This Southwest-inspired Chicken and Rice Bowl is the perfect combination of easy and delicious. Simmered in a perfectly seasoned sauce with cumin and jalapeños, Bush's® Sidekicks™ Southwest Zest™ Pinto Beans will add effortless flavor as a topper for any classic rice bowl.

Ingredients

  • 3 cups instant long grain white rice or brown rice
  • 1-1/2 cups cooked chicken, shredded
  • 1/2 cup Pico de Gallo salsa, mild
  • 1 (15.25 oz.) can Southwest corn (Green Giant), drained
  • 1 (15 oz.) can Bush’s Sidekicks Southwest Zest Pinto Beans
  • 3 Tbsp. Monterey Jack cheese, shredded

Optional Toppings
  • Avocado
  • Sour cream
  • Cilantro

Directions

  1. Prepare rice according to package directions.
  2. Mix cooked chicken with salsa.
  3. In a microwave-safe bowl, layer 1 cup rice, 1/2 cup of chicken and salsa mixture, 1/4 cup corn, 1/2 cup Bush’s Sidekicks Southwest Zest Pinto Beans and 1 tablespoon of cheese.
  4. Cover and microwave for 1 minute, until hot, add desired toppings and serve.
