Roasted Cherry Tomato Caprese

Ingredients

  • 2 cups fresh cherry tomatoes
  • 3 Tbsp. of Bertolli Extra Virgin Olive Oil Rich Taste
  • 8 oz. buffalo mozzarella
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 375°F.
  2. Toss 2 cups of cherry tomatoes in a bowl with 3 tablespoons of Bertolli Olive Oil Rich Taste, ensuring they are well coated. Season with salt and pepper to taste.
  3. Spread the seasoned tomatoes in a single layer on a baking sheet. Roast in the preheated oven for 45 minutes, or until the tomatoes are tender and slightly caramelized.
  4. Allow the roasted tomatoes to cool slightly. For convenience, they can be prepared in advance and reheated before serving.
  5. Slice 8 oz. of buffalo mozzarella and arrange the slices on a serving platter.
  6. Spoon the roasted cherry tomatoes over the mozzarella.
  7. Drizzle additional Bertolli Extra Virgin Olive Oil Rich Taste over the top for added flavor. Serve immediately for the best taste and presentation.
