Roasted Cherry Tomato Caprese
Ingredients
- 2 cups fresh cherry tomatoes
- 3 Tbsp. of Bertolli Extra Virgin Olive Oil Rich Taste
- 8 oz. buffalo mozzarella
- Salt and pepper, to taste
Directions
- Preheat the oven to 375°F.
- Toss 2 cups of cherry tomatoes in a bowl with 3 tablespoons of Bertolli Olive Oil Rich Taste, ensuring they are well coated. Season with salt and pepper to taste.
- Spread the seasoned tomatoes in a single layer on a baking sheet. Roast in the preheated oven for 45 minutes, or until the tomatoes are tender and slightly caramelized.
- Allow the roasted tomatoes to cool slightly. For convenience, they can be prepared in advance and reheated before serving.
- Slice 8 oz. of buffalo mozzarella and arrange the slices on a serving platter.
- Spoon the roasted cherry tomatoes over the mozzarella.
- Drizzle additional Bertolli Extra Virgin Olive Oil Rich Taste over the top for added flavor. Serve immediately for the best taste and presentation.
