It’s Vegan! Walnut and Oat Pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1-1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • 1/4 cup chopped walnuts
  • 1/4 cup quick-cook rolled oats
  • 4 Tbsp. I Can’t Believe It’s Not Butter!® Vegan
  • 1 cup club soda

Directions

  1. Combine flour, baking powder, salt, cinnamon and nutmeg in a medium bowl. Stir in walnuts, oats, two tablespoons of melted I Can’t Believe It’s Not Butter! Vegan, then club soda. Let batter stand 5 minutes to thicken.
  2. Melt two teaspoons I Can’t Believe It’s Not Butter! Spread in large nonstick skillet over medium-high heat then drop batter by 1/4 cupfuls. Cook pancakes, turning once, until done. Repeat with remaining I Can’t Believe It’s Not Butter! Spread and batter.
  3. Serve, if desired, with additional walnuts, sliced bananas, maple syrup and a dollop of I Can’t Believe It’s Not Butter! Spread.
