Grilled Steaks with Spicy Cowboy Butter

Simple grilled steaks are served topped with spiced-herb butter for and indulgent finish.

Ingredients

Cowboy Butter
  • 1/3 cup butter, softened
  • 2 Tbsp. finely chopped fresh chives
  • 4 tsp. The Original “Louisiana” Brand® Hot Sauce
  • 4 tsp. prepared horseradish, strained
  • 2 cloves garlic, minced

Grilled Steaks
  • 4 strip loin steaks (each about 6-8 oz., about 3/4-inch thick)
  • 4 tsp. The Original “Louisiana” Brand® Hot Sauce
  • 1 tsp. salt
  • 1 tsp. black pepper

Directions

Cowboy Butter
  1. In a small bowl, stir together butter, chives, The Original “Louisiana” Brand Hot Sauce, horseradish, and garlic.
  2. Using rubber spatula, spread butter mixture into log shape. Roll mixture tightly in plastic wrap, twisting ends to seal. Refrigerate for 30 to 60 minutes or until firm enough to slice into coins.

Grilled Steaks
  1. Preheat grill to medium-high heat; grease grates well.
  2. Brush steaks with hot sauce and season with salt and pepper.
  3. Grill steaks, flipping once, for 8 to 10 minutes or until instant-read thermometer registers 135°F for medium-rare (or until desired doneness). Let rest for 5 minutes before serving with sliced coins of cowboy butter on top.
Tips
  1. Substitute chives with finely chopped fresh parsley if preferred.
  2. Serve steaks with roasted potatoes and a side salad.
  3. Cowboy butter can also be served on steamed or grilled veggies, tossed with pasta, or brought to room temperature and used as a spread in sandwiches.
