Easy Cucumber Salad

Ingredients

  • 2 English cucumbers, peeled & sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh dill
  • 1/2 cup Elmhurst® Dairy-Free Sour Cream
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. salt
  • 1 Tbsp. maple syrup, or sweetener of choice (optional)

Directions

  1. Place sliced cucumbers, onion and chopped dill in a large bowl.
  2. Add in the sour cream, apple cider vinegar, salt, and sweetener of choice.
  3. Mix until all ingredients are well combined.
  4. Chill in the fridge for at least 30 minutes before serving.
  5. Enjoy!
