Collard Greens with Bacon and Peppers

Ingredients

  • 1 (27 oz.) can Margaret Holmes Seasoned Collard Greens
  • 5 slices bacon, roughly chopped
  • 1 red bell pepper, seeded and diced
  • 1/4 tsp. dried & crushed red pepper flakes
  • 1 pinch sugar
  • Pepper, to taste

Directions

  1. In a medium pot over medium-high heat, add bacon. Cook, stirring occasionally, until brown and crisp, about 5 to 6 minutes. Using a slotted spoon, transfer to a paper-towel-lined plate.
  2. Drain all but 1 tablespoon of grease from pot. To the same pot with bacon fat, add pepper, and sauté until tender, about 3 to 4 minutes.
  3. Add Margaret Holmes Seasoned Collard Greens, crushed red pepper flakes and sugar. Simmer until flavors develop and heated through, about 5 to 7 minutes. Season with pepper.
  4. Top with reserved bacon.
