Greek Turkey Bacon Pasta Salad

Ingredients

  • 1 pk. Godshall’s Uncured Turkey Bacon
  • 1/2 lb. rotini pasta
  • Salt and pepper, to taste
  • 3 Tbsp. extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1/2 Tbsp. brown sugar
  • 1 tsp. oregano
  • 1 English cucumber, thinly sliced
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup kalamata olives
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1 Tbsp. chopped dill

Directions

  1. Boil pasta in well salted water and cook until al dente.
  2. Brown the turkey bacon and cut into bite-sized pieces.
  3. Toss with the pasta.
  4. In a separate bowl, whisk together the oil, vinegar, oregano, a pinch of salt, pepper, and the brown sugar.
  5. Pour the dressing over the pasta and turkey bacon.
  6. Add remaining ingredients (cucumbers, tomatoes, olives, onion, feta, dill) and toss.
  7. Chill in refrigerator and enjoy cold.
